Iceberg Lettuce...Still Delighting Millions of Salad Lovers. There is nothing fresher or more delightful than a crisp head of Iceberg Lettuce. People enjoy Iceberg's crunchy texture and ease of preparation. A form of crisphead Lettuce, Iceberg comes in tight, dense heads similar to Cabbage, and is generally the mildest of the Lettuces. Ever wonder how it got its name? Back in the 1920s, Lettuce was transported on train-wagons, which were filled with crushed ice, making them look like icebergs. Choose an Iceberg Lettuce head that is round, firm and has no discoloration on the outer leaves. Avoid spongy or misshapen heads. The color of Iceberg varies throughout the year, but the preferred color is light- to medium-green. Iceberg may not have as much nutrition as other, darker-green Lettuces, but it is a source of folate and some vitamin C, potassium and iron. It's also a good source of vitamin K. Iceberg is also low in calories and sodium, and is fat- and cholesterol-free.
